Petite madeleine - Mascarpone & Burro

I love a little cake, a little jewel scalloped shell madeleine,unique flavour 
of mascarpone cheese create a really nice taste of this sweets treat.


1 whole egg
1 egg yolk 
50 g caster sugar
60 g plain flour 
2 g baking powder
2 g salt
70 g warm melt butter
50 g mascarpone

1/2 ts vanilla extract

     1. sift the flour,baking powder and salt together.

     2. whisk the eggs with sugar until pale,thick (ribbon stage).

     3. Add the mascarpone and whisk with low speed just to combine.

     4. Add vanilla extract and fold dry ingredient in to egg mixture.

5.      Pour the warm melted butter, fold gently to combine and cover 

          the bowl with cling film and place in refrigerator about 2 hours 

          or an overnight.

      6. Preheat the oven to 180°C.

      7. Brush the madeleine moulds with butter and dust with flour and tap out
          the excess.

      8. Put the mixture into a piping bag and pipe into the prepared madeleine tins.

      9. Place in the center of the oven and bake for about 7-10 minutes.

     10. Invert the tins and turn them out on to a wire racks. 

     11. Serve warm with a cup of hot tea.
